Serve with 1 whole grain roll.
1⁄2 cup uncooked small shell pasta
3 cups hot water or broth
1 can (28 oz/796 ml) diced tomatoes
1 can (19 oz/540 ml) lentils
1 1⁄2 cups frozen mixed vegetables, your choice
Toppings (optional): Pesto or chopped fresh basil
- In a large sauté pan over high heat, combine pasta and hot water.
- Stir in seasoning and diced tomatoes. Cover; bring to a boil. Reduce heat to medium and simmer uncovered for 10 min.
- Meanwhile, drain and rinse lentils. Stir into soup with mixed vegetables.
- Simmer 3 min. Serve with pesto, if desired.
